Candela opened in 2015 with four tables and a single hearth. Here's the short version of how we got from there to here.

We opened on a corner nobody wanted, with a menu of eleven dishes and no back room.

The first workshop
A regular asked to learn knife work. Eight people showed up. We never stopped.

The back room opens
Sixteen seats, its own door, and a kitchen finally big enough to teach in properly.
